Barley Fruit Muffins
The perfect morning snack.
Instructions
  1. Heat oven to 375 F.
  2. In large mixing bowl, combine flours, baking powder, cinnamon, baking soda and salt; set aside.
  3. In medium bowl, whisk together yogurt, eggs, brown sugar, olive oil and vanilla until smooth.
  4. Pour into dry ingredients, mixing until just combined.
  5. Stir in dried fruit.
  6. Spray a 12-cup muffin tin with non-stick cooking spray.
  7. Divide batter equally between muffin cups.
  8. Bake for 15 to 18 minutes or until toothpick inserted in center comes out clean.
  9. Cool in pan for 10 minutes.
  10. Turn muffins out onto cooling rack.

Instructions
  1. Heat oven to 350 F.
  2. In large bowl, beat margarine and sugars until creamy.
  3. Add eggs and vanilla; beat well.
  4. Add combined flour, baking soda, cinnamon and salt; mix well.
  5. And oats and raisins; mix well.
  6. Drop dough by rounded tablespoonfuls onto non-greased cookie sheets.
  7. Bake 10 to 12 minutes or until light golden brown.
  8. Cool 1 minute on cookie sheets; remove to wire rack.
  9. Cool completely. Store tightly covered.
